Mehuron's Seafood Recipes

BROILED SESAME SALMON

Marinade nestles in shallow slashes in the Salmon, releasing a burst of flavor in every bite.  You can apply this technique whenever baking, broiling, or grilling fillets (just don't turn them over or the extra flavoring will go up in smoke!).
A coating of sesame seeds adds a nutty crunch.

2 Tbsp.Sake or Dry Sherry
1 Tbsp.Soy Sauce
             1 Tbsp. + 1 Tsp. Sesame Oil
1/2 Tsp. Sugar
1 1/3 Pounds Center-Cut Salmon Fillet,
no more than 1 inch thick,
cut into 4 serving pieces
4 Tsp.White Sesame Seeds
Green Onion slices or Cilantro leaves - for garnish
  1. In a small bowl, combine the Sake. Soy Sauce, 1 Tbsp. Sesame Oil, Ginger, and Sugar. Stir Until Sugar Dissolves.
  2. Put Salmon on a lightly oiled baking sheet. Slash the Fillets diagonally ¼ inch deep at ¾ inch intervals.
  3. Spoon the marinade generously over the salmon, working it into the slashed.
  4. Sprinkle generously with Sesame Seeds.
  5. Broil until the Sesame Seeds are golden brown, 4 to 5 minutes.
  6. Turn the salmon over & continue to broil for 4 more minutes.
